Pickles

Pickles are created by immersing fresh fruits or vegetables in an acidic liquid or saltwater brine until they are no longer considered raw or vulnerable to spoilage. When we think of pickles, cucumbers commonly come to mind. Pickles also contain phosphorous and folate. Cucumber pickles are a great source of the antioxidant beta-carotene. Beta-carotene has been linked to a lower risk of a number of chronic conditions, including age-related macular degeneration and type 2 diabetes
